  2. 3 dried shiitake mushroom

  6. Flat rice noodles
  7. 4-5 cups soup stock
  8. 4 stalks Chinese chives
  9. Bean sprouts

  1. Soak dried shiitake mushrooms with 2 cups of water for 30 minutes to 1 hour.
  2. Thinly slice reconstituted mushrooms, pork, and shallot.
  3. Cut Chinese chives to about 1-1/2 inches long. Clean bean sprouts under water and set aside.
  4. In a frying pan add 2 tablespoons of cooking oil. Then add shiitake mushrooms and sauté until fragrant. Add shallot and sauté with medium high heat until fragrant. Add sliced pork and cook until the meat is no longer pink. Add 1 tablespoon of soy sauce and then take out and set aside.

  6. Blanch Chinese chives and bean sprouts.Then take out and place them on top of the cooked flat rice noodles.
  7. In a pot, heat up your soup stock and add salt as needed. When it’s ready, ladles to the noodles.
  8. Add cooked pork/mushrooms/shallot mixture on top of the noodles. Add about 2 to 3 tablespoons full of this mixture. Serve warm and enjoy.
